Super Hot Babe

This heat is no joke. And if it is, the joke’s on us. I love summer as much as the next beach girl, but carrying around an infant all day makes my sweat pits two times bigger. Baby Daddy is even more upset about it. And the babe? He’s super hot too, sprouting a rash and a big lower lip whenever he overheats.

Here are some things we’ve done to beat the heat.

1) Take a cold bath.

 

 2) Lounge around in our underwear.

 

3) Watch the tele in the air conditioning.

4) Spit up on ourselves.

5) Practice smiling.

6) Make Cucumber Lemon Water.

So my in-laws have been raving about this cucumber lemon water for weeks and with all that fuss, I just had to try it. Turns out, it’s totally worth raving about. Super easy, very refreshing, and a great way to stay hydrated and cool this summer.  Like most recipes, I found it here.

Cucumber Lemon Water

1 small cucumber (5 inches), thinly sliced

1/3 of a lemon, thinly sliced

2 quarts water

ice

Put the cucumbers and lemons in a pitcher. Pour the water over them, stir gently, and let sit for an hour or so. Pour over ice in a glass and enjoy. You can use the fruit a couple of more times, just refilling the pitcher with water as needed.

Yield: 2 quarts

Recipe Share: Pepperoni Pizza Puffs

These pizza puffs are the last food I made before I popped out a baby. They aren’t something I would ever make for Austin and I, but we were having guests (boys) over for dinner and I knew they’d enjoy them.

Simple, easy, and party perfect. Recipe adapted from this chick.

Ingredients:

  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 4 ounces mozzarella cheese, shredded (about 1 cup)
  • 1/4 grated fresh Parmesan cheese
  • 4 ounces pepperoni, cut into small cubes (about 1 cup)
  • 2 tablespoons finely chopped fresh basil or 1 tablespoon of dried basil
  • 1 tablespoon dried oregano (unless you have fresh!)
  • Pinch of red pepper flakes
  • 1/2 cup (or more) pizza sauce of choice

Directions:

  1. Preheat the oven to 375°. Grease a 24-cup mini-muffin pan. In a large bowl, whisk together the flour and baking powder and other dry ingredients; whisk in the milk and egg. Stir in the mozzarella, Parmesan, and pepperoni; let stand for 10 minutes.
  2. Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
  3. Meanwhile, heat the pizza sauce until warmed through, then stir in 1 tablespoon basil if it needs more flavor. Serve the puffs with the pizza sauce for dipping.

Frozen Assets
Freeze the baked puffs in a single layer on a baking sheet, then transfer to a freezer bag. To reheat, bake the frozen puffs on a baking sheet in a 350° oven for 8 to 10 minutes.

Recipe Share: Pesto Tomato Grilled Cheese Sandwiches

(As of April 1, 2011) Austin works and I do not. So when he comes home for lunch I try to have something ready for him. It is less a matter of gender roles and more about saying “hey thanks for painting in this awful heat because I know you hate it.” I also occasionally enjoy cooking.

Lately these noontime meals have taken a turn for the worse. I only noticed it the other day when I saw Baby Daddy sadly staring down at his plate of two bologna sandwiches and a pile of raisins. I suppose I’ve lost motivation.

Of course I have a big fat excuse hanging around my middle, but I still felt bad and decided to spice things up here at the end of the week with a delicious rendition of Grilled Cheese that I spied on this site. These toasty sandwiches are delicious. If avocados weren’t so expensive, I’d have added them as well.

Ingredients

1) Homemade Bread is best, but I bought a loaf of freshly made Italian from the bakery because it’s just too hot to be making bread.

2) Homemade Pesto is best (broken record!), but I bought a jar at the grocery store due to lack of a garden or sunlight for porch herbs.

3) Tomatoes

4) Cheese of choice, I used a slices of Colby and Wisconsin Sharp. The original recipe calls for mozzarella (but I think that might be terribly boring).

Very Obvious Instructions

1) Spread the pesto on two pieces of bread.

2) Slice tomatoes and cheese and put them in the middle.

3) Grill on skillet (or panini maker if you have one), taking care to cover and press on both sides.

4) Enjoy!

Recipe Share: Baked Brown Rice

Ever since I heard you can bake rice in the oven, I’ve been skeptical. I pictured pulling out a hot, steaming, burnt mess. It doesn’t seem like it would work. Finally I tried it and it’s so easy and wonderful. Perfect for this Honey Baked Chicken recipe or Golden Chicken Curry. Fix it and forget it, I promise it works.

Baked Brown Rice

Recipe from Zoe.

1 1/2 cups brown rice

2 1/2 cups water or broth

2 t butter (optional)

1 t salt

Place everything in an 8-inch casserole dish and cover tightly with foil. Bake at 350 for an hour and a half. Serve steaming hot.

Passing Time

As the days continue to drag on without a baby and with a body full of pregnancy malfunctions, distraction seems to be the best medicine. Here are some things I’ve been doing to pass the time.

1) Read Horrifying Things About Labor, Birth, and Postpartum.

Yesterday I was so antsy sitting around at home that I picked myself up and drove over to Barnes and Noble for a “relaxing afternoon” reading magazines in a comfy chair. After skimming O Magazine and getting dizzy with all the ads, I decided to pick up a few books on babies and further educate myself. One book in particular was not shy about dishing on all the grimy details of labor and beyond. I almost passed out while reading up on your first post-birth poo. Ouch.

2) Make Austin Read Horrifying Things About Labor, Birth, and Postpartum.

For the past week I’ve been  incessantly nagging politely asking Austin to get on the horse and read up on what’s about to happen to my body. He’s (finally) obliged and is now well versed in emergency home delivery (he wishes but we will make it there), what to expect during labor, and all the terrors that come along with pushing 7+ pounds out of a very small space. His favorite term is the “the ring of fire,” a nickname for the baby crowning. This is not my favorite term.

Now that he’s got a clue, Baby Daddy is convinced that I can deliver this kid naturally and drug free (with his expert coaching of course). I was hoping for a milder response, but I guess I asked for it.

3) Make More T-shirt Bags.

Oh how I love thee, t-shirt bag. Last week after a tip from Pinterest, Zoe and I scrounged up some t-shirts and each made a bag. We loved it so much that today we crafted a bunch more (I’m trying to convince myself to give some away). Here are my creations:

4) Make and Freeze Food For Post Baby.

My freezer is tiny, but I have been able to squeeze in some bite sized portions of leftover foods for post-baby meals. This week I made Austin’s favorite dessert, lovingly named “Lazy Wife Cake,” and threw some in the freezer for the next month.

Recipe found below (it rocks and it is so easy, hence the “lazy” part).

 

 

 

 

 

 

 

 

Lazy Wife Cake
(Straight from Mama Baer)

Ingredients

2 cups sugar
1 t salt
1/3 cup cocoa
2 t baking soda
3 cups flour
2/3 cup veggie oil
2 T. cider vinegar
2 t vanilla
1 cup water
1 cup cold black coffee or yogurt or another cup of water

Instructions
Mix sugar, salt, cocoa, soda, and flour. Add everything else. Don’t overmix. Pour into a 9×13 pan and bake at 350 for 40-45 minutes or until toothpick comes out clean.

Butter Cream Icing

Ingredients

1/2 cup (4 oz) butter, softened
4 cups (about 16 oz) powdered sugar
pinch salt
1 t vanilla
3 – 4 T (1 1/2 – 2 oz) milk

Instructions
Cream butter and 1 cup of sugar. Add remaining sugar, salt, milk, and vanilla. Beat until it’s nice and smooth, adding more milk if necessary to achieve a nice spreading consistency. Can be frozen for later use.

5) Attend Social Events

It’s wedding, graduation, and baby season, so we’ve been plenty busy running around to various parties, showers, and celebrations for family and friends. While these events can be tiring, they are mostly a welcome distraction.


6) Chat With Friends.

Hello Alaska! Thank goodness for Skype. Also thank goodness for other supportive friends and family who have been kind enough to send notes, emails, and encourage me as I anxiously anticipate this wonderful and very stressful change.


7) Clean

I’m not sure if it’s nesting or just general despair about dust that has kicked me into cleaning mode. I find myself wanting to clean the oddest places. The ceiling fan, for example, was really bothering me. Luckily Austin is tall and was able to vacuum it off no problem. If only everything would stay clean (how can two people be this messy?!).

As I grow increasingly uncomfortable and agitated in these last moments of pregnancy, I will continue to try to stay as distracted as possible. Suggestions welcome. A watched pot never boils.
