Motley Mama’s (Easy!) Thai Curry Chicken

Ingredients

2-3 tablespoons vegetable oil
3-6 teaspoons curry paste (depending on spice preference)
1-2 lbs skinless, boneless chicken breast meat – cut into pieces (optional)
1 onion, coarsely chopped
1 red bell pepper, chopped
1 head broccoli (chopped)
4 cups coconut milk
2 tablespoon fish sauce
2 tablespoon lemon juice
4 tablespoons fresh ginger
1 can bamboo shoots
1 can bean sprouts
1-2 package Thai Thin Rice Noodles

Directions

Heat the oil in a large skillet over high heat; heat the curry paste in the oil about 30 seconds. Add the chicken and cook another 3 minutes. Stir in all other ingredients; bring to a boil; cook until  chicken is cooked through. Serve hot over rice noodles topped with hot chili sauce.

    The Sparrow – Mary Doria Russell (and the sequel, Children of God)
    Chaos Walking series – Patrick Ness (for post-Hunger Games withdrawal)
    Sookie Stackhouse series – Charlaine Harris (for totally escapist fiction with little redeeming value other than sheer entertainment, which you will maybe find a need for during your internet fast.)

    The new haircut looks great… I always put it off too long and then after a cut, I feel like a new person and promise I won’t wait so long next time.
    As always, I loved the month in review… isn’t it crazy how these kids are fascinated with those toilets… I hate it! Willem is several months older than Waylon and he is still obsessed with them so we have to keep the bathroom door shut all the time. Woe to the person who leaves it open in this house. ;-)

      My brother in law’s claim to fame is (as a toddler) eating poo straight out of the toilet. This haunts me. GROSS.
