End Of The Week Snacks (12.16.11)

Austin started his Christmas break on Wednesday after a long and terrible test.

When it was over, this is what he came home to:

The bad news is that he was worried he didn’t pass the test, so he came home upset and then the sign was kind of awkward.

The good news is that 24 hours later, he found out he did pass with flying colors. Now we can all celebrate Christmas and New Years and having free time and Mommy-getting-a-freaking-break to the max.

I do plan on gifting something for myself this morning when tickets for Coldplay’s July Philadelphia show go on sale. Yes, you heard me right. Coldplay is coming to the East Coast (a rare occasion) and since seeing them live is on my bucket list–I better get on it.

Look out Chris Martin, I’ll be the girl screaming in the very back (along with all the other screaming girls), so happy to finally see you in person.

Speaking of live performances (how do you like these segues?), last night I saw Hairspray at the Fulton theater, courtesy of my dear friend Vanessa.

It was amazing.

If you’re wondering, I left the babe with Austin. It went well. He was fine, I was fine, everyone was fine. It did wrench my heart to leave him though. I apologize for all the eye rolling pre-mom Kate did when mamas complained about missing their kids on night’s out. I thought, “So lame! It’s just one night!”

What an ignoramus.

Austin: Because I don’t drink warm water?

Kate: DO SOME BIRDS NOT HIBERNATE.

 Austin: You mean migrate?

Kate: Do some birds not migrate? I haven’t seen any birds.

Austin: What? You need to go outside.

Recently Eaten

Thai Curry Soup

2 teaspoons of vegetable oil

1 tablespoon of Thai red curry paste

4 cups of chicken stock

1 14 oz can of coconut milk

1 piece of ginger, peeled, about 2 inches

3-4 cups of chicken or tofu

2 teaspoon of brown sugar

2 tablespoons of fresh lime juice

1 tablespoon of fish sauce

Chopped vegetables such as carrots, onions, peppers, those tiny corns, broccoli, celery…

Bamboo shoots (optional)

2 tablespoons of chopped fresh cilantro (optional)

1 small bunch of Thai basil leaves (optional)

Cut the chicken meat into cubes of about 1 inch in size. Heat oil in a large pot over medium-high heat. Add the curry paste and cook quickly for about 30 seconds without burning it. Add the stock, coconut milk and ginger and bring it to a boil. Add the chicken, cover and reduce heat to medium-low. Cook until chicken is cooked through, about 15 minutes. Add the sugar, lime juice,  fish sauce and vegetables. Turn heat up and cook until vegetables are just cooked but still crunchy, about 5 minutes.  Stir in basil leaves and pour into bowls. Top each soup bowl with cilantro and serve with rice. I always double the recipe to make a big pot of soup. Inspired by a recipe found here
