Recipe Share: Chinese Crunch Salad

 

This is a summer favorite of mine. Serve with grilled goodies in the backyard or take it along to a holiday potluck. It’s sure to be a hit.

Ingredients

1 package or 3 C shredded cabbage

1 bunch scallions, tops chopped

1 package Ramen noodles, crunched (chicken or oriental)

1 ½  cups toasted, slivered almonds

3 tablespoons sesame seeds, toasted in 2 tablespoons of butter

Mix well and add dressing*

Dressing

¼ cup vegetable oil

2 tablespoons sugar

3 tablespoons vinegar

salt/pepper

flavor pack from noodles

*I often use more vinegar than it calls for. Taste it before you pour it over the salad and adjust it until you like it. If it tastes oily, add more vinegar. Too sour, add more sugar. Not enough zip – add some spices.
