This week, in exchange for some hard labor, I promised my brother-in-law Kenton any foods he desired for Tuesday dinner. This was one of his requests (and one of my favorites as well). Perfect for summer. Bon appetit!
Ingredients
2 large bunches broccoli, broken into tiny florets
1/2 pound bacon, fried and crumbled
1 cup grated cheddar cheese
1 small red onion, diced (some green onions might be nice if those are available)
1/2 cup mayo
1/4 cup sugar
2 T vinegar
Instructions
*You may want to add more sugar based on a taste test if it’s too vinegar-y.

I like this salad! Simply in season has a recipe for this, pretty similar to the one you shared except you can also substitute plain yogurt for the mayo to cut a a few calories. although, no need to calorie count when you’re preggo :)
